Turkey Saute with Lemon and Walnuts

Ingredients:

  1. 1 lb. turkey breast
  2. 2 Tbsps. cornstarch
  3. 1 green pepper
  4. 2 Tbsps. vegetable oil
  5. ¼ cup walnut pieces
  6. 2 Tbsps. butter or margarine
  7. 4 Tbsps. turkey or chicken broth
  8. 2 Tbsps. lemon juice
  9. 3 Tbsps. lemon marmalade
  10. 1 tsp. white wine vinegar
  11. ¼ tsp. soy sauce
  12. Salt and pepper to taste

 

Directions:

  1. Cut turkey and green pepper into 2-inch strips (makes about 3-4 cups strips).
  2. Heat oil in deep frying pan; fry walnuts and pepper strips for 3 minutes. Remove from pan.
  3. Melt butter in same pan and fry turkey strips for 10 minutes.
  4. Stir in broth and lemon juice. Add lemon marmalade, vinegar, soy sauce, salt, and pepper.
  5. Return walnuts and pepper strips to pan and cook gently for 5 minutes.
  6. Serve with rice or Chinese egg noodles.
